Salmon

  • 4 fillets salmon about 6 oz each; skin-on or skinless

Marinade

  • 1 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 2 cloves garlic finely minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground coriander optional, for deeper flavor
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Garnish

  • fresh cilantro chopped
  • lime wedges for serving
  • avocado slices for serving
  • diced red onion for serving
  • crumbled Cotija or feta cheese for serving

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, smoked paprika, ground coriander (if using), sea salt, and black pepper to create the marinade.
  • Place the salmon fillets in the bowl and coat them evenly with the marinade. Let them marinate for 10 minutes.
  • Arrange the marinated salmon fillets in a baking dish.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Garnish with chopped fresh cilantro, lime wedges, avocado slices, diced red onion, and crumbled Cotija or feta cheese as desired. Serve immediately.

Notes

For a traditional touch, serve the Mexican salmon over warm tortillas for tacos, over seasoned rice for a bowl, or alongside a fresh salad. Adjust the level of spices to your preference, and feel free to add a dash of hot sauce for extra heat.
