Ingredients
  

For the filling

  • 2 medium Apples, peeled, cored, and diced Use varieties like Granny Smith or Honeycrisp.
  • cup Brown Sugar White sugar or coconut sugar can be used as substitutes.
  • 1 tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg
  • ¼ tsp Allspice
  • ¼ tsp Ground Ginger
  • 1 pinch Salt
  • 1 tbsp Unsalted Butter Can substitute with vegan butter.
  • 1 tsp Vanilla Extract
  • 1 tbsp Cornstarch Slurry Optional for thickening.

For the crust

  • 1 package Premade Pie Dough Contains 2 crusts.
  • All-purpose Flour For dusting the work surface.
  • 1 beaten Egg For egg wash.
  • 1 tbsp Milk, Cream, or Water For egg wash.
  • Coarse Brown Sugar For sprinkling on top.

Instructions
 

Preparation

  • Prepare your workspace by gathering all your ingredients and tools: pie dish or muffin tin, mixing bowl, rolling pin, knife, and cutting board.

Crust Preparation

  • If using store-bought dough, take it out of the refrigerator to come to room temperature.
  • Dust your countertop with flour and roll out the dough to about a ¼-inch thickness.
  • Cut small circles of dough to fit into your muffin tin or mini pie dish.

Filling Preparation

  • In a medium bowl, combine diced apples, brown sugar, ground cinnamon, nutmeg, allspice, ground ginger, and salt.
  • Stir well until apples are evenly coated.
  • Mix in cornstarch if using, to thicken the filling.

Cooking the Filling

  • In a skillet over medium heat, melt the butter.
  • Add the apple mixture and stir occasionally, cooking for 5-7 minutes until apples soften.
  • Remove from heat and stir in vanilla extract, then let cool.

Assembling the Pies

  • Preheat oven to 400°F (200°C).
  • Press dough circles into a greased muffin tin.
  • Fill each crust with a generous spoonful of apple filling.
  • Optionally use remaining dough to cover the filling or leave open-faced.

Baking

  • Brush tops with beaten egg mixture and sprinkle with coarse brown sugar.
  • Bake in preheated oven for 15-20 minutes until golden brown and filling is bubbling.

Serving

  • Allow mini apple pies to cool for 10 minutes before removing from muffin tin.
  • Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months. Reheat in a preheated oven for best results.
