  • 1 lb ground turkey
  • ½ cup breadcrumbs can use gluten-free breadcrumbs as an alternative
  • ¼ cup grated Parmesan cheese or a dairy-free cheese alternative
  • ½ cup finely chopped onion
  • ½ cup finely chopped bell pepper any color
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp Worcestershire sauce can use low-sodium version
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup ketchup can use low-sodium if desired

Preparation

  • Begin by gathering all your ingredients and measuring them out.
  • In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, chopped onion, bell pepper, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix until well incorporated but do not overmix.
  • Lightly grease a muffin tin with cooking spray or olive oil.

Cooking

  • Spoon the turkey mixture into the muffin cups, filling them about three-quarters full.
  • Top each muffin cup with a spoonful of ketchup.
  • Bake at 350°F (175°C) for 25-30 minutes or until the internal temperature reaches 165°F.
  • Remove from the oven and let cool for a few minutes before removing from the tin.

Notes

These muffins freeze well. For a different flavor, you can add diced jalapeños or swap the Parmesan for cheddar cheese.
