  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can use gluten-free flour or almond flour.
  • 1 cup cocoa powder Use high-quality cocoa powder for better flavor.
  • ½ teaspoon salt
  • ½ cup chocolate chips

Mint Fudge Layer

  • 1 cup mint fudge (store-bought or homemade) Homemade mint fudge can provide a fresher flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with butter or non-stick spray.
  • In a saucepan, melt the butter over low heat until just melted.
  • Remove the saucepan from heat and mix in the granulated sugar, eggs, and vanilla extract until well combined and glossy.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just combined.

Layering

  • Spread half of your brownie batter into the greased baking dish evenly.
  • Pour the mint fudge over the brownie batter.
  • Gently spread the remaining brownie batter over the mint fudge layer.
  • Sprinkle the chocolate chips on top.

Baking

  • Bake in your preheated oven for 25-30 minutes or until a toothpick inserted comes out clean.
  • Let the brownies cool in the pan for at least 15 minutes before transferring to a wire rack.
  • Once cooled, slice them into squares and serve.

Notes

Store in an airtight container; they last up to a week in the fridge and 3 months in the freezer. Reheat individual pieces for about 20-30 seconds.
