Preparation

  • Gather all ingredients on the kitchen counter and preheat the oven to 350°F (175°C).

Mixing Ingredients

  • In a large mixing bowl, cream together softened butter and powdered sugar until light and fluffy.
  • Mix in the mint extract, scraping down the sides with a spatula.
  • Gradually add all-purpose flour and salt, mixing on low speed until combined.
  • Fold in mini chocolate chips gently to ensure even distribution.

Shaping and Baking

  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper, spacing them 2 inches apart.
  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before rolling them in additional powdered sugar.
  • Transfer cookies to a wire rack for complete cooling.

Notes

For a vegan version, use dairy-free butter and make sure the powdered sugar is vegan-friendly. These cookies are best served fresh but can last a week at room temperature.
