  • 3 large eggs Or substitute with flax eggs.
  • 1 teaspoon vanilla extract For enhancing flavor.
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt Balances sweetness.
  • 1 teaspoon ground cinnamon Or adjust to taste.
  • 0.25 teaspoon ground nutmeg Adds warmth.

Instructions
 

Preparation

  • Gather all ingredients; grate the zucchini and measure everything out.
  • Preheat your oven to 350°F (175°C) and grease a loaf pan.

Mix Wet Ingredients

  • In a large bowl, combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.

Prepare Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Combine Mixtures

  • Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.

Bake

  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes
