Ingredients
  

For the Pancakes

  • 1 ½ cups all-purpose flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk or more if needed
  • 1 large egg
  • 2 Tbsp melted butter plus more for the pan

For the Eggs and Bacon

  • 6 eggs whisked with a splash of milk
  • 8 slices bacon

For Serving

  • 1 cup fresh fruit berries, melon, or sliced bananas
  • ¼ cup maple syrup
  • 1 Tbsp butter for topping pancakes

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix milk, egg, and melted butter. Pour the wet ingredients into the dry mixture and stir just until combined. Do not overmix.
  • Heat a lightly buttered griddle or frying pan over medium heat. Pour 1/4 cup batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
  • In a separate pan, cook the bacon over medium heat until crispy. Drain on paper towels.
  • Whisk eggs with a splash of milk, salt, and pepper. Scramble in a lightly buttered pan until soft and fluffy.
  • Serve pancakes topped with butter and maple syrup, alongside scrambled eggs, crispy bacon, and fresh fruit.

Notes

This brunch can be customized — add avocado toast, yogurt parfaits, or fresh juice for an even more impressive spread!
