  • 5.5 pounds pork belly, cubed or sliced Use high-quality pork belly for the best flavor.
  • 1 cup barbecue sauce Use your favorite brand or homemade.
  • 3 tablespoons smoked paprika
  • 2 tablespoons coarse sea salt
  • 2 tablespoons black pepper Can substitute with cayenne for heat.
  • 2 tablespoons apple cider vinegar Can substitute with lemon juice.

Preparation

  • Preheat your oven to 275°F (135°C) and line a baking sheet with a greased rack.
  • In a large bowl, mix the cubed pork belly with smoked paprika, coarse sea salt, and black pepper until well coated.
  • Place the seasoned pork belly cubes fat side up on the rack in the prepared baking sheet.

Cooking

  • Bake the pork belly for 3 hours, spritzing with apple cider vinegar each hour.
  • After 3 hours, transfer the pork belly to a deep baking pan and toss with barbecue sauce until fully coated.
  • Return to the oven and bake for an additional 30 minutes to develop a glaze.

Serving

  • After baking, let the burnt ends rest for 20 minutes before serving.
  • Serve warm with your choice of sides.

Notes

For a unique twist, consider different barbecue sauces and adding a bit of brown sugar to the dry rub. Serve on a wooden board for a stunning presentation.
