  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • teaspoons dried basil (or ¼ cup chopped fresh basil)
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Prep Your Workspace and Ingredients

  • Start by ensuring your workspace is clean and everything is within reach. Gather all your ingredients on the counter.

Season and Sear the Chicken

  • Pat each chicken breast dry with paper towels, ensuring they brown nicely.
  • Generously season both sides of the chicken with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and sear until golden brown, about 5-6 minutes per side.
  • Remove the chicken from the skillet and set aside on a plate.

Sauté Garlic for the Sauce

  • Reduce the skillet heat slightly, then add butter to melt. Toss in the minced garlic and sauté gently for about one minute, just until fragrant.

Build the Basil Cream Sauce

  • Pour in the chicken broth and bring to a gentle simmer. Scrape any brown bits from the bottom of the pan.
  • Stir in the heavy cream, allowing it to warm through.
  • Add in both mozzarella and Parmesan cheeses, stirring until the sauce is melted and smooth.
  • Add in the basil.

Nestle the Chicken Back into the Sauce

  • Carefully place the seared chicken breasts back into the skillet with the sauce.
  • Spoon some sauce over the chicken to coat it thoroughly.
  • Allow to simmer on low heat for about 10-12 minutes, or until the chicken is cooked through.

Taste and Adjust

  • Taste the sauce and add extra salt, pepper, or red pepper flakes if desired.

Serve and Enjoy

  • Once the chicken is done, spoon generous amounts of the basil cream sauce over it and serve.

Notes

This dish pairs well with angel hair pasta or mashed potatoes. Use fresh basil for best flavor and consider adding sun-dried tomatoes or seasonal veggies for a twist.
