  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 400 g canned tomatoes Crushed or diced tomatoes work well.
  • 2 tablespoons olive oil For sautéing.

Preparation

  • Start by prepping all your ingredients. Chop the mixed mushrooms, finely dice the onion, carrot, and celery, and mince the garlic.

Cooking Base

  • In a large pan, heat the olive oil over medium heat. Once hot, add the chopped onion, garlic, carrot, and celery. Sauté the mixture until the vegetables become soft and fragrant, approximately 5-7 minutes.

Add Mushrooms

  • Add the chopped mixed mushrooms to the pan. Cook them down, stirring occasionally, until they release their moisture and begin to brown, about 8-10 minutes.

Incorporate Tomatoes

  • Once the mushrooms are cooked down, add the canned tomatoes and mix well with the mushroom base.

Season Well

  • Season the mixture with salt and pepper to taste and stir well to combine all ingredients.

Simmer the Ragu

  • Reduce the heat to low and let the ragu simmer for about 20 minutes, stirring occasionally.

Adjust Seasoning

  • After 20 minutes, taste the ragu and adjust the seasoning as necessary.

Prepare for Serving

  • Once the ragu has reached your desired consistency, remove it from the heat. Let it cool slightly while you prepare your pasta or other base of choice.

Garnish and Serve

  • To serve, spoon the mushroom ragu over your choice of pasta or grain. Garnish with freshly chopped parsley.
