Ingredients
  

Éclair Pastry

  • 1 cup water Use fresh water.
  • ½ cup unsalted butter High-quality butter enhances flavor.
  • 1 cup all-purpose flour Can be substituted for gluten-free flour.
  • ¼ teaspoon salt Enhances overall flavor.
  • 4 large eggs Room temperature eggs work best.

Whipped Cream Filling

  • 1 cup heavy cream Can be substituted with coconut cream for dairy-free.
  • ½ cup powdered sugar May use a sugar alternative if desired.
  • 1 teaspoon vanilla extract Use pure vanilla for best flavor.

Gold Glaze

  • Gold luster dust gold luster dust For decorative purposes.
  • 2 tablespoons corn syrup Combine with luster dust for glaze.

Instructions
 

Preparation

  • Gather all ingredients for a smooth cooking process.
  • In a saucepan, combine 1 cup of water and 1/2 cup of unsalted butter over medium heat, stirring until melted.
  • Add 1 cup of all-purpose flour and 1/4 teaspoon of salt. Stir vigorously until the mixture forms a ball and pulls away from the saucepan.
  • Remove from heat and let cool for about 5 minutes.
  • Beat in 4 large eggs one at a time until the batter is smooth and glossy.
  • Prepare a baking sheet with parchment paper. Pipe the batter into 4-inch strips on the sheet, leaving space between each.

Baking

  • Preheat the oven to 425°F (220°C). Bake the éclairs for 20-25 minutes until golden brown without opening the oven for the first 15 minutes.
  • While éclairs are baking, whip 1 cup of heavy cream with 1/2 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form.

Assembly

  • Once éclairs are cooled, slice them open and fill generously with whipped cream.
  • For glaze, mix gold luster dust with 2 tablespoons of corn syrup and brush over filled éclairs for a sparkling finish.

Notes

These éclairs can be made in advance and filled right before serving. Best when eaten within 2-3 days. Store in an airtight container in the refrigerator.
