Main Ingredients

  • 1 kg chicken, cut into pieces
  • 4 large tomatoes, blended You can use fresh or canned tomatoes.
  • 1 large onion, chopped
  • 3 tablespoons vegetable oil Coconut oil can be used for richer flavor.
  • 2 teaspoons ground pepper For a milder option, use paprika.
  • 1 teaspoon thyme
  • 1 cup chicken stock Vegetable stock is a good substitute for vegetarian option.

Preparation

  • Begin by washing and cutting the chicken into bite-sized pieces. Chop the onion and blend the tomatoes until you achieve a smooth puree. Have all your spices and chicken stock ready to make the cooking process seamless.

Cooking

  • In a pot, heat the vegetable oil over medium heat. Once it’s hot, add the chopped onions. Sauté for about 5 minutes until they turn translucent.
  • Next, pour in the blended tomatoes. Stir and let it cook for approximately 10 minutes.
  • Add the chicken pieces to the pot. Stir to coat them in the tomato mixture and allow to brown for another 10 minutes.
  • Add the ground pepper, thyme, and salt to the pot. Stir well.
  • Pour in the chicken stock and bring the mixture to a boil, then reduce the heat to a simmer.
  • Let the stew simmer for about 30 minutes until thickened.

Serving

  • Once thickened, taste and adjust the seasoning if necessary. Serve hot alongside white rice, bread, or fried plantains.

Notes

This dish can be customized with various vegetables or spices. It can also be made ahead of time and reheated.
