  • 1 cup peanut butter
  • 1 cup oats rolled or quick oats
  • ½ cup honey or maple syrup
  • ¼ cup chocolate chips
  • ¼ cup chopped peanuts
  • ¼ cup protein powder optional
  • ¼ tsp salt

Instructions
 

  • In a mixing bowl, combine peanut butter, oats, honey or maple syrup, and salt until well incorporated.
  • Fold in chocolate chips and chopped peanuts (and protein powder, if using) until evenly distributed.
  • Cover the mixture and refrigerate for about 30 minutes to firm up.
  • Once chilled, shape the mixture into balls or press into a lined tray and press flat for cookies/bars.
  • Chill again for about 30 minutes until set. If pressed into a tray, remove and cut into squares before serving.
  • Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
