Ingredients
  

  • 3 ripe bananas mashed, about 1 1/4 to 1 1/2 cups
  • 1 cup white granulated sugar
  • cup canola oil
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 ⅓ cups all-purpose flour sifted
  • 1 tsp baking soda
  • ½ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Gather ingredients and tools.
  • Grease and line a 9×5 inch loaf pan with parchment paper.
  • Mash bananas in a large bowl until smooth.
  • Mix mashed bananas with sugar until well combined.
  • Add eggs, vanilla extract, and oil. Whisk until smooth.
  • In another bowl, sift together flour, baking soda, and salt.
  • Gradually fold dry ingredients into wet mixture until just combined.
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10–15 minutes before transferring to a wire rack. Slice and enjoy!

Notes

For variation, add chocolate chips, walnuts, or a sprinkle of cinnamon on top before baking.
