  • 2 cups frozen peas, thawed
  • ½ cup mayonnaise Can be substituted with Greek yogurt
  • ¼ cup sour cream Can be substituted with a non-dairy alternative
  • ½ cup shredded cheddar cheese Can be omitted for a lighter version
  • ¼ cup diced red onion
  • ¼ cup bacon bits Tempeh bacon can be used for a vegetarian option
  • 2 pieces hard-boiled eggs, chopped
  • 1 tbsp fresh dill or parsley, chopped Both herbs can be used interchangeably
  • to taste Salt & black pepper

Instructions
 

Preparation

  • Gather all ingredients. Thaw the frozen peas by letting them sit at room temperature for 10–15 minutes or rinsing them under cool water.
  • Chop the hard-boiled eggs, dice the red onion, and measure out the bacon bits and shredded cheese.

Make the Dressing

  • In a medium bowl, whisk together the mayonnaise, sour cream, salt, and black pepper until smooth and creamy.

Combine Ingredients

  • In a large mixing bowl, combine the thawed peas, shredded cheddar cheese, diced red onion, hard-boiled eggs, and bacon bits. Stir gently to combine without breaking the peas.

Dress the Salad

  • Pour the creamy dressing over the vegetable mixture and gently fold to coat.

Add Fresh Herbs and Season

  • Add chopped fresh herbs and taste the salad for seasoning, adjusting with more salt, black pepper, or herbs as desired.

Chill the Salad

  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes.

Serve

  • Remove from the refrigerator, stir gently, and garnish with additional fresh herbs before serving.

Notes

For better results, avoid overmixing ingredients and do not skip the chilling step. Serve on a bed of greens for presentation.
