  • 2 tablespoons soy sauce Use tamari for a gluten-free version.
  • ½ medium onion, diced Enhances sweetness when sautéed.
  • Salt and pepper to taste Adjust according to preference.
  • Oil for cooking Any cooking oil suitable for frying.

For the Omelet

  • 2 eggs eggs Beat well for a fluffy omelet.
  • Demi-glace (optional) For added flavor when serving.

Preparation

  • Start by gathering all your ingredients. Ensure the rice is properly cooked and cooled.

Cooking the Base

  • In a frying pan, heat oil over medium heat. Add the diced onion and sauté until translucent.
  • Add your choice of diced vegetables and cook until tender, about 3-4 minutes.
  • Stir in the cooked rice along with soy sauce. Mix well until heated through, about 3-5 minutes.
  • Season with salt and pepper to taste.

Making the Omelet

  • In a separate bowl, crack the eggs and beat them with salt and pepper.
  • Heat oil in another pan over medium-low heat. Pour in the eggs and swirl to create a thin layer. Cook until edges set but the center is slightly runny.
  • Place the fried rice mixture in the center of the omelet and fold over.

Serving

  • Flip the omurice onto a plate and drizzle with extra ketchup or demi-glace.

Notes

Enjoy with a light salad or miso soup to balance the richness. Store leftovers in an airtight container in the fridge for up to three days.
