  • 2 pieces chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper, chopped
  • 1 piece zucchini, sliced
  • ΒΌ cup balsamic vinegar
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Preparation

  • Before you start cooking, gather all your ingredients and tools. Chop your vegetables and dice the chicken, so everything is ready to go.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Cooking

  • Add the diced chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.
  • Stir in the halved cherry tomatoes, chopped bell pepper, and sliced zucchini. Cook for an additional 3-5 minutes.
  • Add 1 cup of orzo pasta along with 2 cups of chicken broth. Stir well to combine and bring to a boil.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes.
  • After 15 minutes, check the orzo. Stir in 1/4 cup of balsamic vinegar, season with salt and pepper to taste.
  • Sprinkle fresh basil on top before serving.

Notes

This dish can be customized by adding different proteins or seasonal vegetables.
