  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh) Such as bell peppers, broccoli, or snap peas
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Preparation

  • Start by gathering all your ingredients. Cut the chicken into bite-sized pieces, measure out the rice, and have the veggies ready to go.

Cooking

  • In a large skillet, heat a splash of oil over medium heat. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear the chicken for about 5 minutes on each side until browned.
  • While the chicken is cooking, whisk together the BBQ sauce and honey in a small bowl.
  • Once the chicken is browned, pour the BBQ honey mixture over the top.
  • Add the rice and chicken broth to the skillet. Stir everything to combine.
  • Increase the heat to bring the mixture to a gentle simmer. Once bubbling, reduce the heat to low and cover the skillet with a lid.
  • Let the rice cook on low for about 20 minutes.
  • During the last 5 minutes of cooking, add mixed vegetables on top of the rice.
  • Take the skillet off the heat and let it sit for 5 minutes.
  • Use a fork to fluff the rice, mixing everything together. Serve hot.

Notes

For added flavor, consider marinating the chicken in the BBQ sauce and honey for a few hours. Garnish with fresh herbs like parsley or green onions for a pop of color.
