  • Gather all your ingredients. Cut the kielbasa into bite-sized pieces and chop the bell peppers. Mince the garlic and set aside. If you're using baby potatoes, cut them in halves or quarters for even cooking.
  • In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the kielbasa pieces and cook until they are browned and slightly crispy, about 5–7 minutes.
  • Once the kielbasa is browned, add the minced garlic and honey to the pan. Stir continuously for about 1 minute to let the garlic cook and release its fragrant aroma.
  • Add the bell peppers and baby carrots into the pan. Stir everything to combine, ensuring all pieces are coated in the flavorful honey garlic mixture.
  • Next, add the baby potatoes to the mixture. Stir well and ensure the potatoes are evenly distributed in the pan.
  • Drizzle the soy sauce over the kielbasa and veggies. Toss the ingredients together thoroughly to ensure all are coated with the sauce.
  • Cover the pan and let everything simmer on low for 15–20 minutes for the vegetables to become tender and the flavors to meld beautifully.
  • Once the cooking time is up, sprinkle fresh parsley or green onions over the dish before serving.
