  • In a large skillet, heat the olive oil over medium heat.
  • Add the spicy Italian sausage and cook, breaking it apart until browned, about 5–7 minutes.
  • Stir in the brown rice and cook for an additional 1–2 minutes.
  • Add the drained white beans and diced tomatoes, mixing well.
  • Pour in the broth and add garlic powder, onion powder, salt, and pepper.
  • Let it come to a gentle boil, then reduce heat to low, cover, and simmer for about 30 minutes.
  • Check for doneness; if the rice is firm, simmer a few more minutes.
  • Once ready, stir in the fresh spinach and cook for an additional 2–3 minutes.
  • Taste the mixture and adjust seasoning if necessary.
  • Serve warm, enjoying the comforting flavors.

Notes
