  • 1 pound spicy Italian sausage, sliced
  • 1 cup brown rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) white beans, rinsed and drained
  • 2 cups spinach, chopped

  • 1 teaspoon Italian seasoning
  • 2 cups water or broth

Preparation

  • Start by gathering all your ingredients. Chop the onion and mince the garlic. Slice the spicy Italian sausage and prepare the remaining vegetables.

Cooking

  • In a large pan, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic, sautéing until soft and aromatic, about 2–3 minutes.
  • Add the sliced spicy Italian sausage and cook until browned and cooked through, about 5–7 minutes.
  • Stir in the brown rice and chopped tomatoes, ensuring well mixed.
  • Add the white beans, salt, pepper, and Italian seasoning.
  • Pour in the water or broth, bringing the mixture to a boil.
  • Once boiling, reduce heat to low, cover the pan, and let it simmer for 40-45 minutes until the rice is tender.
  • Stir in the chopped spinach until it wilts.
  • Taste and adjust seasoning if necessary.

Serving

  • Serve warm and enjoy your hearty meal.

Notes

This dish can last 4–5 days in the fridge. Freeze leftovers for up to 2–3 months.
