Equipment

  • Large Skillet (or wide pan)
  • Lid (for pan)

Ingredients

Ingredients

  • 4 links smoked sausage (e.g. kielbasa, or your favorite) sliced into rounds
  • 1 cup onion diced
  • 1 cup bell pepper diced (any color)
  • 2 cloves garlic minced
  • 1.5 cups long grain white rice
  • 2.5 cups chicken broth or water + bouillon
  • 0.5 cup barbecue sauce your choice, sweet & tangy variety
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 0.5 tsp smoked paprika
  • 0.25 tsp black pepper
  • 0.5 tsp salt

Garnish (optional)

  • chopped parsley or green onions for garnish

Instructions

  • Heat a large skillet over medium heat. Add sliced sausage and cook until lightly browned, about 2–3 minutes per side.
  • Add diced onion and bell pepper to the skillet. Sauté until softened, about 3–4 minutes.
  • Stir in minced garlic and cook for about 30 seconds until fragrant.
  • Add rice, chicken broth, barbecue sauce, tomato paste, brown sugar, smoked paprika, salt, and black pepper. Stir well to combine.
  • Bring mixture to a boil, then reduce heat to low and cover. Simmer for about 18–20 minutes, or until rice is tender and liquid is absorbed.
  • Once done, fluff rice with a fork. Garnish with parsley or green onions, if desired. Serve hot.

Notes

You can swap in sausage alternatives (chicken, turkey, or plant-based). Adjust BBQ sauce sweetness or spice to taste. If rice is undercooked but liquid is gone, add a little extra broth and continue cooking low and covered.
