  • 1 cup orzo pasta For gluten-free, use gluten-free pasta or rice.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large bell pepper, diced
  • 4 cups chicken broth Low-sodium or vegetable broth can be used for a vegetarian option.
  • 1 tsp dried oregano Can be replaced with fresh herbs for enhanced flavor.

Preparation

  • Gather all your ingredients: dice the chicken breast, chop the onion, mince the garlic, and dice the bell pepper.

Cooking

  • In a large pot, heat the olive oil over medium heat. Once hot, add the diced chicken and cook until browned, about 5-7 minutes.
  • Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are tender and fragrant, about 3-4 minutes.
  • Stir in the orzo pasta and let it absorb the flavors for about 1 minute.
  • Pour in the chicken broth, making sure to scrape any bits stuck to the bottom of the pot.
  • Add the dried oregano, salt, and pepper to taste, and stir until well combined.
  • Bring the pot to a gentle boil to cook the orzo properly.
  • Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15 minutes until the orzo is cooked through.
  • After 15 minutes, fluff the orzo with a fork to prevent it from becoming mushy.
  • Garnish with fresh parsley before serving.

Notes

To enhance flavor, add fresh herbs like thyme or basil. For creaminess, mix in cream cheese or sprinkle parmesan cheese before serving. Store in the refrigerator for up to 3 days.
