Ingredients
  

For the Pasta

  • 8 oz pasta (penne or rotini)
  • 2 cups chicken broth or water

For the Chicken

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

For the Sauces

  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • ½ cup grated Parmesan cheese

For Seasoning and Garnish

  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Preparation

  • Dice the chicken into bite-sized pieces, mince the garlic, and shred the mozzarella cheese.

Cooking the Chicken

  • In a large pot, heat olive oil over medium heat. Add the diced chicken and cook for about 5-7 minutes until browned and cooked through.

Adding Flavors

  • Add the minced garlic to the pot and cook for about 1 minute, or until fragrant.
  • Pour in the marinara sauce and chicken broth (or water) and stir to combine.

Cooking the Pasta

  • Add the pasta, making sure it's submerged in the sauce. Bring to a boil, which takes about 5 minutes.
  • Reduce heat to low, cover the pot, and let it simmer for approximately 15 minutes, stirring occasionally.

Finishing Touches

  • Once the pasta is tender, sprinkle in the shredded mozzarella cheese and stir until it melts.
  • Remove from heat and sprinkle the grated Parmesan cheese on top. Add fresh basil if desired.

  • Serve hot and enjoy!

Notes

To store leftovers, let cool completely; can be refrigerated for 3-4 days or frozen for up to two months. Reheat with a splash of water or broth to restore moisture.
