Main Ingredients

  • 12 oz pasta any medium-sized pasta like penne or rotini
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese grated
  • salt and pepper to taste
  • fresh thyme for garnish

Instructions
 

  • Prepare all ingredients: slice the onions thinly and mince the garlic.
  • Heat olive oil in a large pot over medium heat. Add onions and caramelize for about 15 minutes until golden brown.
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Add pasta and vegetable broth. Bring to a boil, then reduce heat and simmer until pasta is tender, about 10 minutes.
  • Stir in heavy cream and grated Gruyère cheese. Mix until cheese melts and sauce is creamy.
  • Season with salt and pepper. Garnish with fresh thyme before serving.

Notes

For a vegan version, replace heavy cream with coconut milk and cheese with a dairy-free alternative. Add mushrooms or spinach for extra flavor and texture.
