  • 1 lb Italian sausage Can substitute with ground turkey or chicken
  • 1 medium onion, chopped Shallots or leeks can be used as alternatives
  • 2 cloves garlic, minced Garlic powder can replace fresh garlic
  • 4 cups chicken broth Vegetable broth for a vegetarian option
  • 1 large potato, diced Sweet potatoes or cauliflower are good substitutes
  • 1 cup kale, chopped Spinach or Swiss chard can be used instead
  • 1 cup heavy cream Coconut milk or almond milk for a dairy-free option
  • Salt and pepper to taste

Preparation

  • Prep your workspace and ingredients. Gather a large pot and chop the onion, garlic, and potato in advance.

Cooking

  • Add the chopped onion and minced garlic, cooking for an additional 3-4 minutes until the onion is translucent.
  • Pour in the chicken broth and bring to a gentle boil, scraping the bottom of the pot.
  • Add the diced potatoes and allow to simmer for 10-15 minutes until tender.
  • Stir in the chopped kale and cook for 2-3 minutes until wilted.
  • Pour in the heavy cream and stir well, cooking for another 5 minutes until thickened.
  • Season with salt and pepper to taste before serving.
  • Ladle into bowls and enjoy with your favorite bread or a sprinkle of Parmesan cheese.

Notes

This soup can be customized with different vegetables or spices to suit any season. Store leftovers in airtight containers.
