Ganache Ingredients

  • 1 cups semi-sweet chocolate chips Creates a rich ganache topping.
  • 0.5 cups heavy cream Needed for the chocolate ganache.

Instructions
 

Preparation

  • Gather all your ingredients. Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well-coated then press firmly into the bottom of a springform pan.

Mixing

  • In a large bowl, blend mascarpone cheese, cream cheese, and granulated sugar with an electric mixer until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in fresh orange juice, orange zest, and vanilla extract until well combined.

Baking

  • Pour the cheese mixture over the crust in the springform pan and spread it evenly.
  • Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.
  • Allow cheesecake to cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Ganache Preparation

  • Heat heavy cream in a small saucepan until just boiling. Pour hot cream over chocolate chips and let sit for 5 minutes before stirring until smooth.
  • Pour the ganache over the chilled cheesecake and spread evenly.

Serving

  • Slice the cheesecake and serve, optionally garnishing with orange zest or chocolate shavings.

Notes

Store leftovers in the refrigerator for up to 5 days. This cheesecake can be made a day in advance and frozen for up to 3 months.
