Instructions
Place Oreo cookies in a food processor and pulse until finely crushed.
In a bowl, mix crushed Oreos with softened cream cheese until combined.
Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
Freeze the balls for 15 minutes to firm up.
Melt white chocolate in the microwave (30-second intervals) or over a double boiler.
Dip each truffle in melted chocolate, letting excess drip off, and place back on the sheet.
Before the chocolate sets, add two candy eyes to each truffle.
Refrigerate until chocolate hardens, then serve and enjoy!
Notes
Store truffles in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
