  • 1 cup black beans Drained and rinsed
  • 1 cup corn Canned or frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese Cheddar or Mexican blend
  • 8 small corn tortillas Ensure they are pliable
  • 1 tablespoon olive oil For drizzling
  • Salt To taste

Preparation

  • Start by gathering all your ingredients. Rinse and chop the fresh spinach.
  • In a mixing bowl, combine the fresh spinach, black beans, corn, cumin, chili powder, and salt. Mix until everything is evenly coated with the spices.
  • In a skillet over medium heat, warm the corn tortillas for a few seconds on each side.
  • Fill each tortilla with the spinach mixture and sprinkle cheese on top.
  • Carefully place the filled tortillas in a baking dish arranged tightly.
  • Drizzle olive oil over the filled tacos.

Cooking

  • Bake in the preheated oven at 375°F (190°C) for 15-20 minutes until the tortillas are crispy and the cheese is melted.
  • Serve hot and enjoy!
