Preparation

  • Wash and dice the potatoes into bite-sized pieces.
  • Rinse the green beans and trim off the ends.
  • Mince the garlic cloves and set all ingredients aside.

Cooking

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, combine the diced potatoes, trimmed green beans, minced garlic, olive oil, salt, black pepper, paprika, and dried herbs. Toss well to coat.
  • Line a baking sheet with parchment paper. Pour the vegetable mixture onto the sheet, spreading it into a single layer.
  • Roast the vegetables for about 25-30 minutes, stirring halfway through.
  • Check for tenderness at the 25-minute mark by piercing a potato chunk with a fork.
  • Once cooked and golden, remove the baking sheet from the oven and let it cool slightly before serving.
  • Serve warm, garnished with fresh herbs if desired.

Notes

To enhance flavor, consider marinating potatoes in olive oil and seasonings before roasting. For extra crispiness, parboil the potatoes for 5-7 minutes prior to tossing with seasonings.
