Ingredients
  

  • 2 cups pancake mix
  • 1 cup milk
  • 4 large eggs
  • 1 lb breakfast sausage links or patties
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ¼ cup maple syrup plus extra for serving
  • cooking spray or butter for greasing the dish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a large baking dish with cooking spray or butter.
  • Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat and set aside.
  • In one bowl, mix pancake mix, baking powder, and cinnamon. In another bowl, whisk together milk and eggs. Combine wet and dry ingredients until just mixed.
  • Spread half of the pancake batter into the greased baking dish.
  • Evenly layer the cooked sausage over the batter.
  • Pour the remaining batter over the sausage and spread evenly.
  • Bake for 25–30 minutes until golden brown and a toothpick inserted comes out clean.
  • Cool for 5–10 minutes before slicing. Serve warm with maple syrup or fresh fruit.

Notes

This recipe is easily customizable — try adding fruits, nuts, or chocolate chips to the batter. Use turkey or plant-based sausage for a lighter or vegetarian option.
