Preheat oven to 375°F (190°C). Grease a large baking dish with cooking spray or butter.
Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat and set aside.
In one bowl, mix pancake mix, baking powder, and cinnamon. In another bowl, whisk together milk and eggs. Combine wet and dry ingredients until just mixed.
Spread half of the pancake batter into the greased baking dish.
Evenly layer the cooked sausage over the batter.
Pour the remaining batter over the sausage and spread evenly.
Bake for 25–30 minutes until golden brown and a toothpick inserted comes out clean.
