  • 1 lb carrots peeled and sliced lengthwise
  • 2 tbsp olive oil
  • cup grated Parmesan cheese
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper

Optional

  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, toss carrots with olive oil, garlic, salt, pepper, and Parmesan cheese.
  • Spread the carrots evenly on the baking sheet in a single layer.
  • Roast for 20–25 minutes, flipping halfway, until golden and tender.
  • Garnish with parsley and serve warm.

Notes

For extra crispiness, broil the carrots for the last 2 minutes of cooking.
