Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss carrots with olive oil, garlic, salt, pepper, and Parmesan cheese.
Spread the carrots evenly on the baking sheet in a single layer.
Roast for 20–25 minutes, flipping halfway, until golden and tender.
Garnish with parsley and serve warm.
Notes
For extra crispiness, broil the carrots for the last 2 minutes of cooking.
