Ingredients
  

For the bar base

  • 2 cups rolled oats Main ingredient for the base.
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • ½ cup brown sugar Can be swapped with coconut sugar.
  • ½ cup unsalted butter, melted Can be replaced with coconut oil for a dairy-free version.
  • ½ teaspoon salt
  • 2 cups fresh peaches, diced Fresh and ripe peaches are ideal.
  • 1 tablespoon lemon juice Enhances the flavor of the peaches.
  • ½ teaspoon cinnamon Adds warmth and flavor.

For the vanilla glaze

  • 1 cup powdered sugar Main ingredient for the glaze.
  • 2 tablespoons milk Can be substituted with plant-based milk.
  • ½ teaspoon vanilla extract Adds flavor to the glaze.

Instructions
 

Preparation

  • Gather all the ingredients listed above.
  • Dice the fresh peaches and toss them with lemon juice and cinnamon.

Cooking

  • Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  • In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, and salt until crumbly. Reserve half of this mixture for topping.
  • Press the remaining mixture firmly into the bottom of the greased baking dish.
  • Spread the peach mixture evenly over the oat base.
  • Sprinkle the reserved oat mixture over the peaches.
  • Bake for 30-35 minutes or until the topping is golden brown.

Finishing Touch

  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract for the glaze.
  • Allow the bars to cool completely before drizzling the glaze over the top.
  • Slice into squares or rectangles and serve.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. Freeze individually wrapped for up to three months.
