Ingredients
  

  • 1 cup creamy or crunchy peanut butter
  • 1 cup brown sugar light or dark
  • ½ cup granulated sugar
  • 1 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup semi-sweet or dark chocolate chips
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare baking sheet.
  • In a large bowl, mix peanut butter, brown sugar, granulated sugar, vanilla extract, and egg until smooth and creamy.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually fold dry ingredients into wet mixture until just combined.
  • Stir in chocolate chips.
  • Drop rounded tablespoons of dough onto baking sheet, leaving 2 inches apart.
  • Bake 10-12 minutes, until edges are golden brown but centers remain soft.
  • Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container for up to 1 week or freeze for up to 3 months.
