vodka

heavy cream

Parmesan cheese

Instructions
Bring a pot of salted water to a boil. Cook penne pasta until al dente (8–10 minutes). Drain, reserving 1 cup of pasta water.
Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3–4 minutes until soft and golden.
Add garlic and red pepper flakes. Cook for 1 minute until fragrant.
Pour in vodka and simmer for 2–3 minutes, reducing the alcohol while scraping the pan.
Stir in tomato puree and simmer for 5 minutes to thicken and deepen flavor.
Lower heat and stir in heavy cream. Cook for 3–4 minutes until creamy. Add reserved pasta water if sauce is too thick.
Stir in Parmesan cheese, salt, and black pepper. Add cooked pasta and toss to coat evenly.
Serve hot, garnished with fresh basil and extra Parmesan if desired.
Notes
Add grilled chicken, shrimp, or sausage for protein. For a dairy-free version, substitute coconut cream and nutritional yeast.
