Brownies

  • 1 box 16-ounce box brownie mix (plus ingredients to prepare according to instructions—usually water, eggs, oil)

Peppermint Frosting

  • ¾ cup butter, softened
  • 2 cups confectioner’s sugar
  • 1-2 tablespoons heavy whipping cream
  • ½ cup crushed candy canes
  • 2 drops red food coloring

Chocolate Ganache

  • 1 cup heavy whipping cream
  • 2 cups semi-sweet chocolate chips

Preparation

  • Begin by gathering all the ingredients listed above. Preheat your oven to the temperature indicated on the brownie mix box.
  • Prepare the brownie mix according to the package instructions, adding any required ingredients like water, eggs, and oil. Pour the mixture into an 8×8 square pan lined with parchment paper. Bake in the preheated oven for the time specified on the box, then allow to cool completely.

Frosting

  • While the brownies are cooling, prepare the peppermint frosting. In a stand mixer or a large bowl, beat the softened butter until it’s light and fluffy. Gradually add confectioner’s sugar, mixing until well combined.
  • Add heavy whipping cream and mix again until creamy. Finally, fold in the crushed candy canes and red food coloring for a delightful holiday touch.

Assembling

  • Once the brownies have cooled, spread the peppermint frosting evenly over the top. Transfer the frosted brownies to the refrigerator or freezer to set for about 20 minutes.
  • To create the chocolate ganache, pour the heavy whipping cream into a microwave-safe bowl and heat it on high for about 60 seconds or until you see steam rising. Immediately add the semi-sweet chocolate chips to the heated cream, cover it, and let it sit for 3 minutes.
  • Whisk until the mixture is smooth and creamy.
  • Pour the ganache over the frosting on the brownies, using a spatula to spread it evenly if needed. Sprinkle the remaining crushed candy canes on top.

Chilling and Serving

  • Return the brownies to the freezer for about 20 minutes to ensure the ganache sets properly. This will help create clean cuts when you’re ready to serve.
  • After the ganache has set, cut the brownies into squares and serve immediately or store away for later enjoyment.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen for longer storage. Use parchment paper to separate layers when freezing.
