Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Gather and measure all ingredients precisely.

Making the Muffin Batter

  • In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, sugar, and brown sugar.
  • In another bowl, whisk together the milk, vegetable oil, vanilla extract, egg, and peppermint extract.
  • Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fold in the chocolate chips using a spatula.

Baking the Muffins

  • Scoop the batter into the prepared muffin tins, filling each cup about three-quarters full.

Making the Ganache

  • In a small saucepan, heat the heavy cream until simmering, then pour it over chocolate chips in a bowl.
