Preparation

  • Start by gathering all your ingredients and tools: mixing bowls, measuring cups, a whisk, a spatula, and your loaf pans.
  • Preheat your oven to 350°F (175°C).
  • Lightly grease your mini loaf pans or one large loaf pan with oil or nonstick spray.

Mixing Ingredients

  • In a medium-sized bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, combine the oil, eggs, and water. Whisk until well combined.
  • Pour the wet mixture into the dry ingredients and gently stir until just combined.
  • Fold in the pumpkin puree until the batter is a uniform color.

Baking

  • Divide the batter evenly among the prepared pans and smooth the top.
  • Bake mini loaves for about 30 minutes or a large loaf for about 55 minutes until a toothpick comes out clean.
  • Allow cooling in the pans for 10 minutes before turning out onto a wire rack.

Serving

  • Slice your bread and serve warm or at room temperature. Enjoy with maple syrup, butter, or plain.
