Preparation

  • Start by gathering all the ingredients. Chop the vegetables and season the chuck roast with salt and pepper.
  • In a large pot, heat the olive oil over medium-high heat.

Cooking

  • Once the oil is hot, add the chuck roast. Sear it on all sides until browned, about 4-5 minutes per side.
  • After searing, add the chopped onion, carrots, and potatoes to the pot. Stir them around to coat.
  • Pour in the beef broth, scraping the bottom to release browned bits.
  • Toss in the fresh thyme and bay leaf, ensuring they are submerged in the broth.
  • Cover the pot with a lid and transfer to a preheated oven. Cook for 3 to 4 hours at 325°F (163°C) until meat is tender.

Resting

  • After cooking, remove the pot from the oven and let it rest for about 20 minutes before serving.
