  • 4 chicken breasts boneless and skinless
  • ¼ cup olive oil
  • 2 cloves garlic minced
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp lime juice freshly squeezed
  • salt and pepper to taste
  • fresh cilantro for garnish

Instructions
 

  • In a large bowl, whisk together olive oil, minced garlic, cumin, paprika, lime juice, salt, and pepper to create a marinade.
  • Add chicken breasts to the bowl, coating them evenly. Cover and marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
  • Preheat your grill to medium-high heat. Brush the grates with oil to prevent sticking.
  • Grill the chicken for 6–7 minutes per side, flipping once, until grill marks appear and the internal temperature reaches 165°F (74°C).
  • Remove from grill and let rest for 5 minutes before slicing to retain juiciness.
  • Garnish with fresh cilantro and lime wedges. Serve with rice, grilled vegetables, or salad.

Notes

For a spicy kick, add a chopped jalapeño or a pinch of chili powder to the marinade. You can substitute chicken breasts with thighs or drumsticks for juicier results. Leftovers make great sandwich fillings or salad toppings.
