Ingredients
  

  • 2 slices bread white, sourdough, or whole grain
  • 2 slices cheese mozzarella or provolone recommended
  • 2 tbsp pesto store-bought or homemade
  • butter for grilling

Instructions
 

  • Spread 1 tablespoon of pesto on one side of each bread slice.
  • Place a slice of cheese on the non-pesto side of one slice of bread, then top with the other slice (pesto sides facing in).
  • Butter the outer sides of the sandwich.
  • Heat skillet over medium heat. Grill sandwich for 3–4 minutes until golden brown.
  • Flip, butter the second side, and cook for another 3–4 minutes until cheese melts.
  • Slice in half and serve warm.

Notes

Enhance with add-ons like sliced tomatoes, spinach, or avocado. Try sourdough for a heartier flavor, or swap in vegan cheese and gluten-free bread for dietary needs.
