  • Start by gathering all your ingredients. Slice the onions as thinly as possible to allow for even pickling.
  • In a medium-sized pot, combine your apple cider vinegar, water, sugar, and salt. Turn the heat to medium, and stir the mixture regularly until the sugar and salt dissolve entirely.
  • Continue to heat the mixture until it reaches a gentle simmer, avoiding a full boil.
  • Once your mixture is simmering, remove the pot from the heat and pour the hot brine over the sliced onions in a glass or ceramic jar.
  • Give the onions a good stir to ensure they are all submerged in the brine. Allow it to cool to room temperature before sealing the jar.
  • Place the jar in the refrigerator. For the best flavor, let it pickle for at least an hour before tasting. The longer they sit, the more the flavors meld.
