  • 1 lb smoked sausage Sliced into 1.5-inch pieces.
  • 8 oz cream cheese Softened.
  • 1 cup shredded cheese Cheddar or your choice.
  • ½ cup barbecue sauce
  • ¼ cup jalapeños Optional.
  • slices Bacon Enough to wrap each sausage.
  • Fresh herbs For garnish, optional.

Preparation

  • Gather all your ingredients and slice the smoked sausage into 1.5-inch pieces.

Cooking

  • Preheat your grill to medium heat. Hollow out a small portion from the center of each sausage slice.
  • In a mixing bowl, combine the softened cream cheese, shredded cheese, barbecue sauce, and jalapeños (if using). Mix until well incorporated.
  • Fill each hollowed sausage slice with the creamy cheese mixture without overfilling.
  • Wrap each filled sausage shot with a slice of bacon. Secure with a toothpick if necessary.
  • Grill the Pig Shots for about 20-25 minutes, or until the bacon is crispy. Turn them occasionally.
  • Check for doneness; the bacon should be crispy and the cheese bubbling.
  • Remove from the grill, let them rest for a few minutes, then garnish with fresh herbs and serve hot.

Notes

Mistakes to avoid include overfilling the sausage, undercooking the bacon, and not hollowing out the sausage properly. Consider marinating sausage slices in barbecue sauce for added flavor.
