Ingredients
  

Chicken

  • 1 lb boneless skinless chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

Sauce and Add-ins

  • 1 cup pineapple chunks fresh or canned, drained
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 1 red bell pepper chopped
  • ½ cup green onions sliced
  • 2 cloves garlic minced

Rice

  • 2 cups cooked white rice

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and black pepper, then cook until golden and fully cooked through.
  • Add minced garlic and chopped red bell pepper to the skillet and sauté for 2–3 minutes.
  • Stir in pineapple chunks, pineapple juice, soy sauce, and brown sugar. Simmer for 5–7 minutes until slightly thickened.
  • Fold in cooked rice and toss until everything is evenly coated and heated through.
  • Garnish with sliced green onions and serve warm.

Notes

For extra flavor, add a splash of sesame oil or a sprinkle of red pepper flakes. Brown rice can be used instead of white rice for a whole-grain option.
