  • 1 tsp vanilla extract
  • 1 cup shredded coconut

Preparation

  • Gather all ingredients and ensure that your butter is softened.
  • Preheat your oven to 350°F (175°C).

Mixing

  • In a large bowl, cream the softened butter with granulated and brown sugars until fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in crushed pineapple and vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing gently.
  • Fold in shredded coconut.

Baking

  • Drop spoonfuls of cookie dough onto a lined baking sheet, spacing them 2 inches apart.
