  • 1 cup shredded coconut Optional to toast for added flavor.
  • 1 teaspoon vanilla extract For extra flavor.
  • Graham cracker crust (store-bought or homemade) Use gluten-free crust if needed.

Preparation

  • Gather all your ingredients and ensure the crushed pineapple is well drained.

Mixing

  • In a mixing bowl, beat the heavy whipping cream until soft peaks form, about 2-3 minutes.
  • Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
  • In a separate bowl, combine the drained crushed pineapple and shredded coconut, stirring well.
  • Gently fold the pineapple and coconut mixture into the whipped cream using a spatula.

Assembly and Chilling

  • Spoon the mixture into the prepared graham cracker crust or individual dessert cups.
  • Cover with plastic wrap or foil and refrigerate for at least 2 hours.

Notes
