Main Ingredients

  • 4 cups Fresh Pineapple, chopped into small pieces Ensure the pineapple is ripe for the best flavor.
  • 2 cups Sugar Can substitute with agave syrup or honey.
  • ¼ cup Lemon Juice, freshly squeezed Lime juice can be used as a substitute.
  • 1 package Pectin Follow the package instructions for exact amounts.

Preparation

  • Wash, peel, and chop the fresh pineapple into small, bite-sized pieces.

Cooking the Mix

  • In a large pot, combine the chopped pineapple, sugar, and lemon juice. Heat over medium heat while stirring frequently to dissolve the sugar completely.
  • Continue cooking until the mixture reaches a full rolling boil, about 5–10 minutes.

Thickening

  • Once at a boil, add the pectin as per the package instructions and stir well to combine.
  • Let the mixture boil for another 5–10 minutes, stirring constantly until thickened.

Jarring

  • Sterilize your jars by boiling them in water for 10 minutes.
  • Pour the hot jam into the sterilized jars, leaving about 1/4 inch at the top.
  • Wipe the rim of each jar with a clean cloth to remove any residue, then seal with lids tightly.
  • Allow the jars to cool completely at room temperature.
  • Label your jars and store them in the refrigerator or process them for longer shelf life.

Notes

Store in the refrigerator for up to three weeks or in a cool, dark pantry for up to a year if processed in a water bath. Reheat gently on the stove if needed.
