  • 1.5 cups long grain white rice
  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk Can substitute with unsweetened almond milk
  • 1 envelope onion soup mix Can use homemade
  • 1.5 cups shredded cheddar cheese Can substitute with mozzarella or pepper jack
  • 3 pieces boneless skinless chicken breasts Can substitute with thighs or shredded leftover chicken
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients and utensils: a mixing bowl, measuring cups, a baking dish, and aluminum foil.
  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the rice, cream of chicken (or mushroom) soup, milk, water, and onion soup mix. Stir until well mixed.
  • Grease your baking dish. Carefully pour the rice mixture into the dish, spreading it out evenly.
  • Sprinkle half of the cheddar cheese over the rice mixture and stir it in gently.
  • Place the chicken breasts on top of the rice mixture without stirring.
  • Season the chicken lightly with salt and pepper.

Baking

  • Cover the baking dish tightly with aluminum foil and bake for about 1.5 to 2 hours.
  • After cooking, remove the foil and sprinkle the remaining cheddar cheese over the top.
  • Return to the oven, uncovered, for about 10-15 minutes until the cheese is melted and bubbly.
  • Once out of the oven, let the casserole sit for 15-20 minutes before serving.

This casserole is versatile—feel free to add seasonal veggies or different proteins based on availability. Perfect for potlucks and family dinners!
