Ingredients

For the filling

  • 1 tsp vanilla extract
  • 2 cups white chocolate chips, melted Dairy-free options are available.
  • 1 cup pistachio nuts, finely chopped Can be substituted with other nuts.
  • 2 large eggs
  • 0.25 cups heavy cream Use coconut cream for a dairy-free version.

Instructions
 

Preparation

  • Gather all your ingredients and measure them out.
  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan and bake for about 10 minutes until lightly golden.

Making the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add 1/2 cup of sugar and vanilla extract to the cream cheese and mix until well combined.
  • Incorporate the melted white chocolate into the cream cheese mixture and blend until fully combined.
  • Fold in the finely chopped pistachios.
  • Add the eggs one at a time, mixing well after each addition.
  • Pour the cream cheese filling over the baked crust.

Baking

  • Bake the cheesecake for 45-50 minutes until the edges are set and the center is slightly jiggly.
  • Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or preferably overnight.

Serving

  • Whip the heavy cream until soft peaks form and spread over the chilled cheesecake.
  • Garnish with additional chopped pistachios if desired.

Notes

Can be customized with different toppings or served at various events. Try adding a layer of mixed berry compote or a chocolate swirl for variation.
