  • 2 pounds pork shoulder Trimmed and cut into manageable pieces
  • 1 can sauerkraut, drained About 24 ounces
  • 2 medium apples, sliced Use your favorite variety for sweetness
  • 1 onion, chopped
  • 1 teaspoon caraway seeds Optional for extra flavor
  • Salt and pepper to taste
  • 1 cup chicken broth Ensure it's gluten-free if necessary

Preparation

  • Start by gathering all your ingredients and preparing them. Trim any excess fat from the pork shoulder, and cut it into manageable pieces if necessary. Chop the onion, slice the apples, and ensure the sauerkraut is drained well.

Cooking

  • Place the pork shoulder in the bottom of the slow cooker.
  • Layer the drained sauerkraut over the pork.
  • Follow this with the sliced apples and chopped onion.
  • Sprinkle the caraway seeds, salt, and pepper over the top.
  • Pour the chicken broth evenly over everything in the slow cooker.
  • Cover the slow cooker and set it to cook on low for 6-8 hours.
  • Once cooked, carefully remove the pork shoulder from the crockpot and shred it using two forks.
  • Mix the shredded pork back into the sauerkraut and apple mixture before serving.

Notes

For a gluten-free version, ensure your chicken broth is gluten-free. For enhanced flavor, add a splash of apple cider vinegar or a drizzle of honey. Store leftovers in airtight containers in the fridge for up to 4 days or freeze for up to three months.
